Easy Peasy Chocolate Pie

When I decided to make a chocolate pie for Thanksgiving this year I was looking for a good, creamy and easy recipe that was super chocolatey. I couldn't find one that peaked my interest so I decided to put a spin a cream frosting that I use to layer cakes and came up with this mighty tasty, chocolatey and easy pie that will surely please all your guests.

Easy Peasy Chocolate Pie

1 stick unsalted butter room temp

8 oz softened cream cheese

2 packages of instant chocolate pudding

4 cups whipping cream

1 cup egg nog

8 oz semi-sweet chocolate chips

1 baked pie shell

First cream the butter and cream cheese together in a mixing bowl until well combined and creamy, add both packages of instant chocolate pudding and whip until well combined. Start adding whipping cream until all 4 cups have been added, whip this on high until thick and creamy, add 1 cup of real egg nog and whip until combined, then melt chocolate chips with 1 pat of butter in a double boiler or you can do like I do and do it in the microwave. You want them really melted so you can pour the chocolate into the cream mixture. Now whip on high for a minute until everything is completely combined and thick like a very stiff whipped cream. Make sure to scrape the bottom of the bowl as you go to make sure nothing gets stuck to the bottom and everything is well combined. Now fill your pie shell until full and spread it out well. You can add homemade whipped cream to the top and let it chill in the fridge or you can dollop it on top after the pie has chilled at least 2-4 hours in the refrigerator. The pie keeps well and serves well.
