Fall is upon us and comfort food is just a must on a cool fall day. I don't know about you but fall is my absolute favorite season!!! I get so giddy and excited when the leaves start changing colors and I can break out my sweaters and sweatpants.
This is a super easy and fast chicken pot pie when you don't feel like making a pie crust or going for a traditional chicken pot pie. No worries it is still delicious! I promise you won't miss the pie crust.
Feel free to make this the shortcut alternative to this. I am going to share how I make it AND short-cuts you can take to save time.
First.........I use one of my fresh pastured chickens we raise on our farm of course! I put in the crock pot and cook it all day the day before with some garlic and onions. Pull the meat off the bone and you have your meat and broth to make your casserole. The short cut here would be buying a rotisserie chicken at the store pull the meat off and purchase some chicken broth to use. (Just know you are sacrificing taste and health) I prefer the make it myself method.
Second.....pull the meat off and shred it into a casserole dish and top with vegetables. I use frozen peas and carrots. But feel free to use your favorite vegetables here.
Third....take your broth and make a flour slurry. This is where you take flour and mix with milk and water (1:4 ratio) until all the lumps are gone and slowly whisk and stir until your broth thickens. It should look like this. Add salt, pepper and chicken seasoning to taste.
Pour your chicken gravy over your chicken and vegetables.
(Shortcut: combine 2 cups of broth and two cans of cream of chicken soup, seasoned to taste)
Fourth.....use my homemade bisquick recipe (click here) or just use Bisquick, 2 cups of bisquick, 1/3 cup milk, 1 cup shredded cheddar cheese. Mix together.
Fifth.....drop biscuit mix in spoonfuls into your casserole dish. Or you can pat the mixture out and cut to make biscuits and sit biscuits into mixture. (see pic) Cut up a stick of butter over the top of the biscuit mixture or just top biscuits with butter.
Bake at 400 for about 12 minutes. It should be bubbling and biscuit mix baked through.
